I love cheesecakes, and I try them every time with a new glaze, a different flavor. I tried both baked and no-bake cheesecakes, and every time I love it more than I did before.
Today, it’s a mango cheesecake. It’s super melting, super good, and heavenly delicious.

Cheesecake: a fabulous dessert!
A cheesecake is always a great idea! It is a super pleasing and delicious dessert that you can devour anywhere and anytime. It is also the perfect dessert for all your parties.
The most tricky part about cheesecake is how to master its baking. If you overcook it, it will have this grainy and dry texture, which is not at all pleasant. If it is not well cooked, you will end up with a little slice of sweet soup for sure.

Mango Cheesecake Recipe
Ingredients
Crust
- 1 1/2 cups sweet cracker crumbs
- 2 tbsp brown sugar
- 3/4 cup shredded sweetened coconut
- 5 tbsp melted butter
Cheese layer
- 1 fresh mango (Ideally ripe)
- 3 tbsp fresh lime juice
- zest of 2 limes
- 225 g cream cheese
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
Mango gelee
- 1 fresh mango (Ideally a ripe mango)
- 2 tbsp fresh lime juice
- 2 tbsp fresh lemon juice
- 2 teapoon corn starch
- 2 tbsp granulated sugar
Instructions
Crust
- In a large bowl, add the crushed crackers, sugar, and shredded coconut. Mix the dry ingredient and gradually add the melted butter while stirring.
- When all the ingredients are perfectly combined, pour the mixture into a cheesecake pan (ideally mesures). Gently press the mixture to get a uniform height all over the pan
- Bake in a preheated oven to 180 degrees for 10 minutes. Then let it cool down aside.
Cheese layer
- First, cut the mangos and add them to a blender. Blend with fresh lime juice until you get a smooth mango puree. Set it aside.Blend the cream cheese and sugar until smooth. Then add eggs, one by one, while blending.Incorporate vanilla, lime zest, mango/lime paste. Blend until the ingredients are perfectly combined.Now, pour the mixture into the already baked crust.
- Bake the bain-marie way:Prudently wrap the cheesecake pan with foil to prevent water from getting into it. Then place it in a large baking pan, and pour hot water into the dish until it is 1 inch deep.Then move it carefully to the oven.Bake at a temperature of 170°C for one hour. Then open the oven and let the cheesecake cool down for one extra hour.
- When the cheesecake is cool enough, move it to the fridge and let it rest overnight or at least for 4 hours.
Mango gelee
- Cut the mangos and add them to a blender. Blend with fresh lime and lemon juice until you geta smooth mango puree.In a saucepan, add two tablespoons of this mango puree, sugar, and cornstarch and whisk until perfectly combined.Then add the remaining puree and start cooking over medium heat while whisking.When it begins to boil, remove it from heat and let it cool. You can also move it to the fridge to cool quickly.
- Now that the cheesecake has chilled and the mango glaze is ready, you can proceed with the final layer:Pour the mango glaze in the center of the cheesecake and spread it using a spatula until you get a flat surface.
- Now you can garnish with anything of choice: whipping creams, fresh mango pieces.You can also sprinkle some lime zest and a bit of shredded coconut.
Serve your mango cheesecake!
Before serving this mango cheesecake, I have garnished it using coconut whipping cream, some mango pieces, and I have sprinkled them with lime zest and a bit of shredded coconut. The result was heavenly fabulous!
This cheesecake is so gourmet and creamy that you won’t stop at a single bite. I assure you this. So, If you are a gourmand soul, better abstain, and don’t you come and blame me
