Vegan Focaccia Bread
Ingredients
For the dough
- 3 1/2 cup all-purpose flour
- 1 1/2 cup warm water
- 1 teaspoon yeast
- 1 teaspoon sea salt
- 1/2 teaspoon brown sugar (or any sweetener of choice)
- 3 tbsp olive oil
- 1 teaspoon rosemary
For the decoration
- A handful of fresh parsley
- 1/2 cup black olives (pitted and chopped)
- 1 teaspoon dried oregano
- cherry tomato or tomato skin for decoration
Instructions
- Mix together the warm water, sugar, yeast, and oil.
- Add in the flour, rosemary, and salt and mix well to combine the ingredients. The dough should be cohesive and soft.
- Put the dough in a large bowl, drizzle a bit of olive oil on top of it, cover it with plastic wrap or a kitchen towel and let it rest for about 40 minutes until doubled In volume.
- When the dough has risen, put it in a well-oiled baking sheet.Press the dough into the pan using olive oil.
- Sprinkle on your toppings, make sure prick the dough several times with your fingers. Drizzle again a bit of olive oil.
- Cover the baking sheet and let it again rest about 15 to 30 minutes.
- When the dough has risen again, sprinkle it with a bit of salt and bake in a preheated oven 170°C for about 30 minutes.
Secrets for a successful Focaccia bread
- The Focaccia dough should be smooth and stretchy.
- The main secret of Focaccia bread is the dimples created all over the dough. They help to fix the filling and to absorb olive oil which gives it the golden brown color and the crisp texture it has. So, don’t hesitate to play the piano on the soft dough.
- Before baking the bread in a preheated oven, make sure to add a generous drizzle of olive oil and salt. The Focaccia will be crisp and golden on the top and bottom crusts, and in the inside, it will have a fluffy crumb with lots of air holes.

Focaccia bread is best eaten fresh, but it can be frozen as well. To do so, you need to cut it into slices and then grill it directly in the toaster from the freezer. Adding a drizzle of olive oil will make it taste so fresh.
